About

HealthyStaceyApron

Hello, Sunshine 🙂

My name is Stacey and I am weirdly passionate about health. I am not a doctor, a nurse, or even a nutritionist (YET).

I am currently working to become board certified to by the National Association of Nutrition Professionals (NANP). But I didn't need this certification to tell me how to be healthy.

For as long as I can remember, I have been obsessed with cooking, grocery shopping, reading nutrition labels, and understanding how our food affects our bodies. I started this blog as a way to share good recipes and write down my experiences in navigating the health food world. But what it's really become is a way for me to be a Food Coach to each and every reader who stops by (and hopefully stays awhile).

A self-proclaimed health nut, I have been eating organic since before I could pronounce it. I get more excited to go to Whole Foods than I do to go shopping. I spend a good portion of my time poring over recipes and nutrition labels. And there is not one bite of food that I let enter my body before considering how it affects my health.

Over the years, my definition of health has changed. From restrictive to ridiculous, I have been all the way and back to keep my body "healthy". Which is exactly why I am happy to report that, today, I have a very different definition of what I consider that to be.

Yes, I believe in organic eating, chia seeds, vegan dishes, grass-fed meat, farm-to-table, homemade meals and a daily heaping mound of vegetables (and I'll share all that good stuff with you here). But I also believe in listening to my body. And if my body says give yourself a break from the gym or indulge in ice cream tonight, by God, I am going to hear it out! (And I'll share those moments too).

I truly believe that being healthy is directly related to being happy and as a wise Elf once said, "Smiling is my favorite!" I'd like to think that I offer the same contagious energy that Buddy the Elf does. Except for I'd probably replace maple syrup with coconut oil.

I'm going to do my very best to coach you through health food. But just so I know I'm not just talking to myself (let's be honest, I often am), I beg you to ask questions, comment back, post on my Page, Tweet me, email me! I am more than happy to answer your questions. Please join me in eating, cooking, movie-quoting, exercising and smiling (not necessarily in that order). Through this blog, I am your personal Food Coach. But if you'd like private consultations, please contact me to find out more information.

Without further ado, I present you with Healthy Stacey.
